Eats 7-12-12

B: 1/2 cup steam-sauteed cabbage, 2 diced chicken thighs, 2 T homemade sriracha-mayo, iced coffee with 1 T heavy cream.

AM snack: 1/4 cup raspberries and slivered almonds with coconut milk.

L: Czech meatballs, steam-sauteed cabbage, cauliflower puree.

Snack: 1/2 green pepper, sliced, handful of snap peas.

Dinner: Meatza with mushrooms, broccoli, and a few green olives.

Post-physical therapy snack: 1 small roasted sweet potato.

Eats 7-11-12

Breakfast: 3 hardboiled eggs with homemade sriracha mayo, small amount (1.5 oz?) of leftover Czech meatball mix fried in bacon grease, coffee with 1 oz heavy cream.

Mid-morning snack: 1/4 cup raspberries and 0.5 T slivered almonds in 1/4 cup coconut milk, 1T coconut butter, 1 small handful homemade trail mix (late lunch today!).

Lunch: “Pad Thai” (from Well Fed): zucchini noodles, snap peas, sliced asian omelet, onions, almond butter sauce, chicken thighs. 1/2 can diet cherry Dr. Pepper (this was a mistake, had a fake-sugar headache!)

Snack: Frozen yogurt (bad!)

Dinner: Wasn’t hungry because of my snack, ate a few Czech meatballs with mustard.

Think I need to eat a bigger breakfast, but I get full kind of fast in the morning….don’t love that I’m snacking at 9am, but c’est la vie.

This is the first time I’ve had coconut milk in a long while.  I was really into it when I first started paleo, but then I tried heavy cream over berries (or alone!) and was so swayed.  Might be time to get back to it, I liked it a lot with the raspberries.

Eats 7-10-12

Breakfast: 3-egg omelet topped with homemade sriracha mayo, 2 oz smoked wild-caught salmon, iced cold-brewed coffee with 1 oz heavy cream.

Mid-morning snack: 1/2 cup raspberries with 1 TB slivered almonds and 1 oz heavy cream.

Lunch: 1/4 lb Czech meatballs (from Well Fed), 1/2 cup steam-sauteed green cabbage, 1/2 cup cauliflower puree.

Afternoon snack: 1 T coconut butter, 1 bottle of VitaCoco coconut water (plain).

Dinner: Beef Meatza (first one!) with mushrooms, kale chips, and roasted broccoli.  1/2 cup raspberries and 1 small square 90% dark chocolate for dessert.

Posting my eats, and other thoughts

Breakfast: Three-egg frittata with cherry tomatoes and roasted asparagus, topped with cilantro-lime “pesto.”  1/2 cup blackberries.  Coffee with heavy cream (at least 2T).

Lunch: 1/3 pound shredded chicken tossed with “salsa” of finely diced radishes, carrots, and herbs in a lime vinaigrette.  Jicama slices topped with homemade mayonnaise (lots!).  Whole baked sweet potato.

Dinner: Sliced flank steak with roasted jalapeno chimichurri sauce.  Roasted carrots tossed with olive oil, salt&pepper.  Scoop of coconut butter.

Going paleo after years of eating a conventionally “healthy” diet (whole grains! mostly vegetarian! lots of fruit! low fat!) is a truly strange experience.  I almost can’t believe how differently I eat.  Before I would never have believed that I could consume meat for at least 2 (if not 3) meals per day.  I would not have thought that I would eagerly search out new sources of fat, that I would be satisfied without a serving of starch at every meal.  And yet here I am.

It’s odd to visit the food blogs I used to drool over and bookmark constantly.  Everything is so….sugar laden.  And stuffed with “healthy whole grains.”  Vegetarian meals that leave me thinking….is that it?  Take away the grains and bread and you’re left with no substance or fuel.  The few times I’ve eaten starch again, it’s been mostly a disappointment.  I don’t miss the various wraps and things (flatbreads, tortillas, etc) — lettuce wraps are just as good, and lunchmeat is its own delicious roll-up.  I tried beans, my old favorites, at a friend’s house for dinner and couldn’t believe how they upset my stomach!  Can’t imagine eating them 7 days a week now.  Even when I pick up a scone, another favorite treat of the past, it’s not as delicious as I remember.  Bread products are more flavorful in my memory, but when I eat them now they are so, well, floury and bland.  I know that sounds ridiculous and like I’m fooling myself.  All I can tell you is try it for yourself.  The change is amazing.

Some sweets are still delicious.  Ice cream is by far my biggest indulgence.  Still, I feel great eating this way, despite a somewhat flexible approach to paleo eating.
